Substitute agave syrup with a infused mint honey. Combine 1/2 cup of honey with a 1/4 cup of mint leaves. Simmer and stir frequently, until the honey is fully dissolved. Reduce heat to medium-low and simmer for another 5 minutes. Remove from heat and strain out the mint leaves.

I used bottled grapefruit juice, but you can try making your own grapefruit puree by peeling the grapefruit and adding it to a high-speed blender Blend unil liquified.

Pour the puree into the glass, add prosecco and top with the mint-infused honey.

Garnish with a grapefruit wedge and/or mint sprig.
